Hey Neil, are you in model space or layout?

Model space. Why?

If it's just a pdf of the item then you need to set up the page size you want of the pdf itself.

  1. Open the page setup command to access the dialog box.
  2. Choose your printer/plotter and set up your page size.
  3. Set the scale: in the Plot Scale section at the lower-right corner of the dialog box.
  4. Uncheck the Fit to Paper checkbox if you want a specific scale.

Then go to the export pdf command and select window and highlight what you want to show.

This should print what you need in the page size specified.

suggest a couple of things. get into printing from the layout space. you can keep your model space for just that, the main model. the layout space can be for your different sheets - using viewports with specific scales / separately notated / etc. keeps everything neater.
